Mrs. Coy completed a Bachelor of Science degree in Landscape Management from Brigham Young University, and freelances as a landscape designer, emphasizing in learning landscapes. Having lived abroad extensively while her husband served 22 years as an officer in the Air Force (now retired), Mrs. Coy developed a profound love for America, and an understanding of the tremendous sacrifice that must be made to keep it free. While living in Eagle River, Alaska, Mrs. Coy served as the president of the board of directors for the Alaska Fine Arts Academy, and was instrumental in starting a community theater that helped save the academy from closing its doors. She was very involved with her sons in Boy Scouts, including as a Round Table commissioner for the Great Alaska Council, Eklutna District, where she received the Lord Baden Powell award for commissioner of the year (2004). Mrs. Coy is a member of the International Society of the Daughters of Utah Pioneers. She enjoys researching and compiling family histories, working in her garden (4-H Jr. Master Gardner Leader, and Master Gardner qualified in Alaska and Utah), pruning trees, hiking, and reading. Her greatest joy comes from being married to and spending time with her husband, Lee, and their six children, three daughters-in-law, one son-in-law, and five grandchildren. Languages that are spoken in her family include Japanese, Spanish, Ukrainian, Russian, Hungarian, Latvian, French, Vietnamese, and Arabic (Mrs. Coy speaks Spanish). The Coys have one daughter still living at home, Elliana, who is very excited about the opportunity of attending American Heritage School.
